1. Preheat oven to 350.
2. Combine the dough ingredients (except the sprinkles) in the food processor and process until a ball of dough forms. This takes 2-3 minutes at high speed. Add the sprinkles and pulse just until they are evenly distributed.
3. Press into an 8x10 inch rectangle, 1/2 thick, on a parchment-lined baking sheet. Cut into 1/2 inch squares. Separate the cookies. (Make sure to look up at my photos to see this step by step!)
4. Bake for 8-10 minutes or until lightly browned around the edges. Cool completely.

1. Combine peanut butter, peanut flour, sweetener, and vanilla. Mix thoroughly. You may need to knead it with your hands to incorporate all the peanut flour. If it seems dry add 1-2 tablespoons softened butter or coconut oil.
2. Divide into 10 pieces and shape into eggs. Put on a baking sheet lined with wax paper. Refrigerate for an hour or two.
3. Melt the chocolate and coconut oil in the microwave or in a double boiler. I normally microwave in short increments stirring every 20-30 seconds.
4. To cover the eggs it is easiest to use a fork to place in the bowl of melted chocolate. Cover the top and then lift out the egg, scraping the bottom on the rim of the bowl to remove the excess chocolate.
