Easy, old fashioned jello salad can be adapted for raspberry, strawberry, lime, or orange flavors, mixed with fruit, or topped with a creamy dollop of cool whip. Pour jello into a large bowl (helps with splatters while mixing). Add 2 cups of boiling water and stir to dissolve. Add 8 ounce softened and chopped cream cheese to dissolved, hot jello.
You’ll be happy to know that this low carb jello salad is just as easy to make as the classic version! You can beat the cream with a stick blender if you have one, which literally takes seconds. Then fold and stir in the other ingredients and chill for a few hours (the jello salad) (but also you) and it’s ready to go!
Pour into desired serving dish--I use a 9x13'' pan, but you could put it in a trifle or other dish-- and refrigerate for several hours or until firm. Serve with a dollop of whipped cream and chopped walnuts or pecans, if desired. Make-Ahead Instructions: Jello Fruit Salad can be made 1-3 days ahead of time, stored in the refrigerator.
Ingredients 1 6 ounce box any flavor jello 2 8 ounce package cream cheese, softened and chopped into large pieces 3 2 cups boiling water
