But all the other ingredients (vegetables and beef) are almost zero carb. So my nutrition facts of my recipe say the Japchae carb is around 23 g per serving which is not high but not low either. You can make it low carb by reducing the amount of noodles and adding more vegetables and meat.
What is japchae? Japchae (잡채) literally means “mixed vegetables.” However, the main ingredient of this classic dish is Korean sweet potato starch noodles (dangmyeon, 당면), also known as glass noodles. Japchae is an essential dish for traditional holidays and special occasions.
Ingredients for Japchae (6 to 8 servings) Main. 250g (8.8 ounces) Korean sweet potato starch noodles (dangmyeon,당면) 100g (3.5 ounces) rib eye fillet. 1 medium carrots (120g, 4.2 ounces) – rinsed, peeled & julienned. 110g (3.9 ounces) baby spinach – rinsed and drained.
The noodles used in Japchae are made from sweet potato starch and are know as DANGMYEON. These noodles are more popular as Glass Noodles because upon cooking they become transparent, hence they got the name “Glass Noodles”. Using these noodles makes this japchae recipe so different.
