Traditionally, only rum and port wine are used in Jamaican Christmas cakes, and no other types of alcohol. Be sure to not overmix the batter, as stirring too much will cause the gluten to develop, creating a tough fruit cake. Vegan fruit cake will store for a surprisingly long time without spoiling. Especially when soaked in alcohol after baking.
For my Jamaican Fruit Cake I used Bob’s Red Mills Gluten-Free All-Purpose flour, you may substitute flour of your choice, such as oat-flour, rice flour. For deep brown color, I used molasses but in Jamaica, we used browning as well.
