Category: Side DishCuisine: Austrian, French, GermanCalories: 159 per serving1. Wash the mushrooms and slice them into 0.5 cm thick slices. Peel and finely chop the onion. Chop the parsley finely.
2. In a frying pan heat up 1 tbsp butter/oil/lard. Fry the mushrooms until they start to brown. They should not start to “shrink” yet. Remove the mushrooms from the pan and set them aside.
3. Using a further tbsp butter/oil/lard fry the onions. Add the tomato paste just when they begin to brown, and fry for a further minute. Deglaze with the vegetable stock/broth and cream.
4. Add the mushrooms back in and season with salt and pepper to taste. Add the thyme, parsley and balsamic vinegar and cook the sauce until you achieve the desired consistency.

Total Time: 25 minsCategory: Main CourseCalories: 20 per serving1. Whisk all ingredients together in a saucepan, adding the water last. Start with a cup of water, then whisk in a bit more at a time, until it reaches a consistency *slightly thinner* than barbecue sauce. I ended up using about 1 1/2 cups of water, but it will vary depending on how thick your tomato paste is.
2. Bring to a gentle boil at medium-high heat, then reduce to medium-low. Simmer, stirring frequently, for 20 minutes, or until slightly thickened.
3. Taste and adjust sweetener or cayenne pepper if you prefer the sauce to be sweeter or spicier. If it's still thicker than you like, you can stir in additional water, a tablespoon at a time, until reaching desired consistency.
