Beat in eggs, applesauce, vanilla extract, 1/2 teaspoon cinnamon, nutmeg, and allspice until smooth. Mix 2 cups flour, baking soda, and salt together in a separate bowl; stir into butter mixture, alternating with buttermilk until just combined. Fold in chopped and shredded apples and walnuts. Pour batter into the prepared loaf pan.
Add a Topping – Simply combine cinnamon, brown sugar, flour and butter until crumbly and add just before baking. Replace half the oil with unsweetened apple sauce. Eliminate the cinnamon sugar mixture on top. You can find my full list of baking substitutions here. Prep – Preheat oven and grease loaf pans.
It’s apple season! And while apples by themselves are not very low carb or diabetes friendly, using an apple or two in low carb baked goods can really satisfy that craving. I used one small apple in this low carb apple fritter bread recipe and it’s spread over 12 servings.
Preheat oven to 350 degrees. Combine sugar, flour, baking powder and salt. Set aside. Beat eggs, milk and oil until just combined. Gradually add dry mixture to wet until just moist. Add apple and cinnamon. Grease baking dishes and pour mixture an inch below to the top to compensate for rise.
