The apricot is a fruit you will often see in Hungarian Christmas recipes. A luscious fruit that we use to soothe and soften dry skin in Eminence Organic Skin Care products, the apricot also adds rich sweetness to holiday baking.
Her Hungarian Cookies are made with sour cream, not cream cheese, as is used in most Kiffles recipes, so it turns out an even more delicate and light pastry dough than most. She never called these Kiffles though, they were always just called Hungarian Cookiesin our family.
Place dried apricots in a small saucepan and pour in just enough water to cover the apricots. Boil until the apricots are soft. Do not let all the water evaporate. Add a little bit more to keep the filling from burning. Add the sugar and continue to cook until thick. Either puree in a food processor or with an immersion blender in a bowl.
