It is no surprise that a high ratio shortening buttercream recipe is the decorator’s buttercream. It is the most stable style of buttercream. Essentially, buttercream is a blend of sugar and butter, then creamed to produce a fluffy frosting in its most simple form.
You may use all butter in this quick buttercream, but using vegetable shortening makes a frosting that will be a little firmer in warmer temperatures. Also, using the optional meringue powder, while not strictly necessary, will help your frosting holds its shape. Beat the butter and/or shortening until fluffy.
BeBeJune 17, 2015 at 11:21 pm Hi Mattie, In the recipe section we have the Fluffy Chocolate Buttercream. If you are going to use high ratio I would decrease the shortening amount to 1 1/4 cup (236g.) and increase the milk to 1/4 cup plus 2 to 3 Tablespoons milk or enough to make it the consistency you like.
Mascarpone cheese is similar so it might work too. Overall, this is a terrific low carb chocolate buttercream frosting for any cake. It could easily pass as a real sugar frosting. It’s a moist low carb gluten free chocolate cake made with coconut flour.
