For the best keto-style meatloaf glaze, heat 1 cup of sugar-free balsamic vinegar, 1 Tablespoon of low or no sugar tomato paste, and 2 Tablespoons of sugar-free maple syrup. Simmer until the glaze is thickened and brush over the meatloaf before the second bake. Cool meatloaf up to 10 minutes before removing and slicing.
To make the meatloaf: Heat the oil in a large non-stick frying pan and gently fry the onion, carrot, celery and garlic for 10 minutes until well softened, stirring regularly. Stir the chilli powder and thyme into the pan and cook with the vegetables for a further 2 minutes, stirring constantly.
