Gradually whisk in the oil, starting with a few drops and then adding the rest in a steady stream to make a smooth, slightly thick dressing.
Basil & Mint Vinaigrette (Dressing) If it tastes a little bitter, it could be the extra-virgin olive oil – reduce the evoo to 1/4 cup and increase the light olive oil by the same OR use all light olive oil or regular salad oil next time. If the 1 tablespoon of sweetener is too sweet, leave it out.
