1. Set Instant Pot to sauté mode and add oil. Once heated, add bacon, onion, and garlic to the pot. Cook, stirring, until the onion and garlic are lightly browned, approximately 6 to 8 minutes. Add black pepper, cayenne, and garlic powder. Cook until entire mixture is coated in spices, approximately 2 minutes.
2. Add chicken stock, ham, water, bay leaves, and black eyed peas. Stir to combine. Secure lid and cook on Manual High Pressure for 25 minutes at high pressure. It will take about 10 minutes for the Instant Pot to come to pressure.
3. After cooking is finished and Instant Pot beeps, allow pressure to release naturally for 15 minutes, then vent to release remaining pressure. Remove bay leaves, stir in salt. Using a potato masher, mash peas until desired consistency is reached.
4. Turn Instant Pot to sauté mode. Let simmer 5 minutes or until desired thickness is reached. Ladle into bowls. Garnish with freshly cracked black pepper, a drizzle of olive oil, and Tabasco to taste.

1. Add black eyed peas and water (or vegetable broth) to the Instant Pot and stir to prevent sticking. Pressure cook on high for 15-17 minutes (15 minutes for more firm, 17 for more tender // it will take about 8 minutes for the Instant Pot to pressurize before cooking begins).
2. Once the timer goes off, allow to naturally release for 15 minutes, then release any remaining pressure. Carefully remove lid once steam has fully escaped and strain off any excess cooking liquid.
3. Enjoy immediately in soups or stews, with greens, rice, mashed potatoes, and/or roasted squash. Store cooled leftovers in the refrigerator up to 5 days or in the freezer up to 1 month. Reheat in a saucepan on the stovetop, adding a little water as needed to prevent sticking.

1. Add black eyed peas, vegetable broth, water and salt to the Instant Pot. Lock the lid of the Instant Pot. Place the pressure release handle (vent) in the “Sealing” position.
2. Press the Pressure Cook button, making sure the “High Pressure” setting is selected, and set the time. Note that it takes about 10 minutes for the pot to “preheat” and come up to pressure before it starts cooking. (During cooking, avoid touching the metal part of the lid.)
3. After the Instant Pot beeps, set a timer and wait for 15 minutes to let the Instant Pot naturally release pressure. Then vent any remaining steam by moving the vent to “Venting”, covering your hand with a towel or hot pad. Never put your hands or face near the vent when releasing steam. (The pressure indicator in the lid may drop on its own during this time, meaning that there is no remaining steam in the pot.)
4. Open the lid of the Instant Pot. (If you’re planning to use the peas in a recipe like Texas caviar or black eyed pea salad, drain them into a strainer.) There will be more water than you think left in the pot, but you’ll use this to create a creamy sauce. Grate the garlic clove into the pot, then stir in the smoked paprika, oregano, onion powder, and the butter, (if using). Stir continuously for a few minutes until a creamy sauce forms.

1. Turn the Instant Pot on and press the Sauté function key. Add the butter, onions and bacon and sauté for 4-5 minutes. In the meantime, cut away some of the skin from the sausage and squeeze out the ground meat mixture in small chunks.
2. Add the pork sausage, celery and bell pepper and stir through. Add the rest of the ingredients, stir through and press Cancel to stop the Sautéing.
3. Pop and lock the lid and set the Instant Pot to Manual, HIGH pressure, for 10 minutes. After 3 beeps, the Instant Pot will start to build up the pressure and cooking will begin. Once the cooking stops, allow 10 minutes for natural pressure release, then do the quick release and open the lid.
4. Stir in the lemon juice and taste for salt and pepper. You can also add a little cayenne pepper if you like more heat.
