At high altitudes, the slow cooker simmers at a lower temperature, making it more difficult for the food to reach a safe temperature and for bacteria to be destroyed. If your slow cooker has an adjustable temperature control, select a setting that will maintain the food at 200 °F or higher.
Decrease liquid by 2 to 4 tbsp. for every cup of liquid in a high altitude recipe. You can decrease the liquid by eliminating up to one egg. Cook leavened baked goods at 15 to 25 degrees lower than the temperature called for in high-altitude baking recipes, and increase cooking time by 5 to 8 minutes for every half hour.
You can easily convert between high and low temperatures for the slow cooker. Turning to high will obviously shorten the cooking time but may also affect the dish’s overall texture and taste. Personally, I always recommend going low and slow unless you need the food fast or the recipe asks for it to be set on high.
This means most recipes can be cooked on either setting. If a recipe calls for cooking on the HIGH setting for three hours, you can cook it for seven hours on the LOW setting instead. Or if a recipe calls for eight hours on HIGH, it can be cooked for up to 12 hours on LOW.
