1. Preheat oven to 200° with a baking sheet topped with a rack inside.
2. For the chicken, combine flour, salt, and pepper in a shallow dish. Place egg white mixture in another shallow dish. Pound chicken pieces inside a resealable plastic bag with a ½ tsp. water with the flat side of a meat mallet to ¼-inch thick to form cutlets.
3. Dredge cutlets in flour mixture; shake off excess. Evenly coat cutlets in egg mixture, allowing excess to drip off. Dredge cutlets again in flour mixture; shake off excess.
4. Heat oil in a nonstick skillet over medium-high. Cook cutlets until golden on both sides, about 6 minutes total, then transfer to prepared rack in oven to keep warm.

1. Trim two skinless boneless chicken breast.
2. Chop one medium onion and one jalapeno.
3. Add to the crock pot; one 14 oz can low sodium chicken broth, one tablespoon cumin, one to two teaspoon paprika, two teaspoon chili powder, three garlic cloves minced, one teaspoon salt, 1/2 teaspoon pepper, and optionally 1/2 teaspoon of cayenne pepper. Add chicken and cook on high for 1 1/2 to 2 hours.
4. Remove the chicken from the crock pot and shred. Return the chicken to the crock pot.
