2. Add the chopped chocolate into a large mixing bowl and set aside. In a microwave-safe bowl melt the coconut oil for 45 seconds or until completely melted. Pour the hot coconut oil over the chocolate and let it sit for about 5 minutes. Stir the chocolate until it is fully melted. If it does not fully melt, reture the chocolate mixture to the microwave for about 15-30 seconds until it melts completly.
3. Once melted, stir in the sweetener, pinch of salt and a little vanilla and stir to combine. Taste the mixture and add additional sweetener if desired. Stir in the cereal.
4. Pour the chocolate cereal mixture into the lined baking dish and refrigerate until firm (at least an hour).
