Slow Cooker Root Beer Pulled Pork is a recipe a classic recipe everyone must try! Tender pork with root beer and barbecue sauce, great on buns or even rice. I received this recipe from a dear friend. When I asked her for the recipe she said just plop the pork in, dump a can of root beer and add a couple of squirts of barbecue.
Sear the pork on all sides in the hot pan. Place the pork roast into a 6 quart or larger slow cooker and poke holes in the top of the roast with a sharp knife. Add the onions to the slow cooker. Pour the root beer over the roast and cover and let cook for 8 hours on LOW.
Stir together some cumin, garlic powder, onion powder, salt, parsley, and paprika and rub it all over the pork to coat. Pour your favorite low carb beer into the bottom of the slow cooker.
Place the dry rubbed pork shoulder on top of the onions and pour 1 bottle of root beer and your favorite BBQ sauce over the pork. Cover and cook on Low for 8 hours. Pour 1 bottle of root beer in a small saucepan. Bring to a boil and turn to medium-low and simmer for 15-20 minutes until reduced to about 1/3 cup of syrup.
