Normal durum wheat-based pasta is out of the question, but there are a lot of low carb options out there. Heat olive oil in a medium-sized saucepan over medium heat. Add onions and saute for 2 minutes until softened. Add garlic and saute for 30 seconds more. Add all the remaining ingredients to the pan and stir it up. Bring to a boil.
If you use fresh tomatoes to make low carb pasta sauce, they will have to be blanched first to get the skins off, then chopped up, and cook them down until they reach the desired texture. Plum tomatoes are too dry and will not give you the consistency that you need.
DIRECTIONS Heat a saute pan on medium heat. Pour in the olive oil. Stir the tomato paste gently into the oil. It may not completely mix just yet. (Don't get the heat too high). Add the cream and stir into the tomato mixture. Heat it gently so that it almost starts to simmer. At this point it is done. Add the crushed garlic and fresh ground pepper.
You can also use fresh tomatoes but you will have to blanch them first to remove the skins. If you want your keto pasta sauce to be smoother, and are using fresh tomatoes that have not been cooked down, then you could blend it with an immersion blender or in a traditional blender.
