1. In a large saucepan, add the butter and saute the onions, potato and garlic over medium heat, until soft and brown, burned. This may take 30+ minutes; add 1 tablespoon of honey about 15 minutes in, to help caramelize. Lower the heat if needed.
2. De-glaze the pan with 2 cups wine. Then add the water, beef base, and bouquet garni. Simmer another 15 minutes, then remove the bouquet garni and puree with an immersion blender. Stir in the balsamic vinegar and cream. Then salt and pepper to taste.
3. Meanwhile, preheat the oven to 400 degrees F and line a baking sheet with parchment paper. Use a cookie cutter or glass to cut out 8+ circles the size of your serving cups.
4. Sprinkle the puff pastry rounds with Fontina cheese and bake for 15 minutes, until lightly golden and fluffy. Serve the soup with a cheese pillow on top of each cup.

4. Ladle soup into oven safe bowls. Divide cheeses (bout ¼ cup) over bowls or bread and broil briefly until golden and bubbly.

Turn the heat up to high and add the wine (or sherry) and cognac. Cook until reduced by half. Add the broth. Bring to a boil and reduce to a simmer. Simmer the soup, partially covered, 20-30 minutes. Adjust seasoning with salt and black pepper.
4. Top the bread with equal amounts of grated cheese. Toast the bread in the toaster oven for a couple of minutes until the cheese melts and the bread is toasted. Alternatively, you can place the bread on a baking sheet and place it under the broiler. Ladle the soup into bowls and top each one with a slice of cheesy toast. Serve hot.
