In a large bowl, cream together the butter, brown sugar, and granulated sugar until fully combined. Beat in the egg and brandy extract, scraping down the bowl when necessary.
Preheat the oven to 375 degrees F (190 degrees C). Grease 2 cookie sheets. Beat brown sugar, white sugar, and butter with an electric mixer in a large bowl until creamy.
