1. Add the water and cinnamon sticks to a small pot on medium-high heat. When you see the water begin to bubble add the Splenda Stevia and stir to dissolve. Add the cranberries, orange zest, and vanilla extract and stir. Bring the pot back up to a low boil and then lower the heat to simmer the cranberries for about 10 minutes.

2. Bring the cranberry sauce ingredients to a boil, give the ingredients a stir, and put the lid on the pot. Turn the stove down to low to simmer for 15 minutes until the cranberries start to pop and the sauce thickens. Stir the mixture periodically while it's cooking.
3. Remove the cinnamon stick. Let the sauce cool in the fridge for a few hours to set up. It can be served warm or cold. The cranberry sauce keeps in the fridge up to 2 weeks.
4. Makes 2 cups of sauce, serves 8.
