Add the flour mixture in two additions, beating each until well combined. Stir in the cranberries and pecans. At this point, you can either bake, or freeze. To freeze, just scrape the dough onto plastic wrap, roll into a log, wrap tightly, and freeze until ready to bake.
The other thing to note is that coconut oil has a lower melting point so it may make the low carb cookies spread out more. If you use coconut oil make sure to refrigerate the dough ahead of time before baking, that way the coconut oil has more time to set.
