What Are No-Bake Cornflake Cookies? The authentic no-bake cornflake cookie recipe is an easy recipe made with sugar, peanut butter, cornflakes, and corn syrup. It’s not a healthy cookie recipe since it contains lots of added refined sugar and, for most recipes, sweetened cornflakes cereals.
However, you can still make low carb oatmeal cookies with almond flour and a few other ingredients as a substitute. What are those other ingredients you ask? We chose to use a combo of oat fiber and unflavored beef gelatin to give both the texture and the flavor of oatmeal cookies. We also used slivered almonds to mimic the texture of oats.
But then corn flakes, oats, and pecans get added to the dough, and they become something irresistible! The cookie itself is wonderfully soft. The oats make them a bit chewy. The texture of the corn flakes changes a bit as the cookies bake, but they still maintain a lot of their crunch.
