Consider sautéing some finely chopped onions and sweet bell pepper in the butter before adding the corn. It makes a delicious and colorful side dish. Alternatively, add a small amount of finely minced jalapeño pepper or chipotle pepper for some heat. (A dash of cayenne pepper would be good as well.)
Grease your skillet. I love using my cast iron skillet for this low carb cornbread recipe, but if you don’t have one, you can use a regular 10″ pie or round baking dish. It just browns better with the cast iron. Stir together the almond flour cornbread dry ingredients: almond flour, baking powder, sweetener, and sea salt.
Combine all ingredients in a large bowl and gently toss. Season with salt & pepper to taste. If time allows, grill your corn for maximum flavor. Preheat grill to medium high heat.
