1. Combine the cheese cubes and milk (and optional water) into a large glass microwave safe bowl. Microwave on high for 5 minutes, stirring every minute. The mixture might seem watery during the first few stirs, but will come together as a nice runny dip after all the cheese is melted. Remove from the microwave and stir in the rest of the ingredients.
2. Combine all ingredients in a small Crock Pot. Set on low for 1 hour, stirring occasionally. Once melted, reduce setting to warm.
3. Store any leftover cheese dip in the fridge. Reheat in the microwave, stirring every 30 seconds until creamy and hot.

1. Grate both the cheeses on a large grater. Set aside.
2. Add the butter to a sauté pan over medium heat. When the butter is hot and bubbling, add the onion, poblano and serrano peppers. Cook for a couple of minutes to soften. Add garlic, tomato and cumin.
3. Pour in the evaporated milk, chipotle powder and whisk in the corn starch. Bring to a simmer, stirring often to make sure corn starch doesn’t clump on the bottom until thickens. If you find that it is not getting thick after a few minutes, add a little more corn starch (1 teaspoon at at time) until it is the right consistency. Remove the pan from the heat and stir in the grated cheese in small batches until melted. Taste to test for salt, add if needed. The queso will also thicken more after turning off the the heat. Serve warm.
