The best low carb brownies are made with only five simple ingredients! And, they have an amazing soft fudge-like texture. Use a food processor to blend together the almond butter and erythritol. Then, add in the eggs, cocoa powder, baking powder, and a pinch of salt.
Preheat oven to 350°F. Using a spoon, stir eggs, sugar, and vanilla; add butter. Sift together Sweet ground chocolate, flour, salt and baking powder. Stir into egg mixture. Add nuts and/or chocolate chips. Spread into 8" or 9" square baking pan. Bake 20-30 minutes. For chewy brownies use 8" pan and less baking time.
I used Ghirardelli, which has a wonderful flavor. The baking powder helps the brownies rise a little bit so they don’t come out super flat. Of course, brownies need cocoa powder! If they aren’t rich enough for you, go ahead and use dark chocolate cocoa powder. Just make sure that you always use unsweetened cocoa powder. You’ll also want to use a good quality unsweetened cocoa in the recipe.
