    3. Cool the mixture and blend into a sauce consistency, I like to keep the sauce a bit chunky but if you prefer can blend it smooth.
    4. In the same pan used above, spray oil and pour the sauce and cook it for 10 minutes or so adding in salt, pepper and Italian mixed herbs.

Add the carrots and cook for another 4 minutes or so. Add the garlic and cook about 30 seconds until fragrant. Remove the mixture from the pan into a bowl and set aside.
    3. Add the mushrooms in a single layer and saute for about 4 minutes. Remove from the pan and set aside in the bowl with the carrots.
    4. Add the zucchini and squash to the pan and saute until lightly golden, 4-5 minutes. Remove from the heat and add to the other cooked vegetables.
