I'd be very skeptical if it says don't toast it - a pizza oven gets far hotter than a conventional oven.. As for fathead, I'm not sure, but the fact most recipes call for precooking the base (rather than cooking with toppings from the start) makes me think it won't be amenable to rapid cooking in a pizza oven.
