2. Bring a large pot of water to boil, remember these floppy guys will firm up and set up when cooking so you want something big enough for them to “grow” in.
3. Add one tbsp olive oil, bay leaves, wine corks, 1/2 tbsp peppercorns, the large piece of lemon rind, a pinch of salt and a splash of apple cider vinegar to the poaching solution.
4. Once it’s boiling, add in the octopus. Let them boil for 40-45 minutes.

2. Whisk the marinade ingredients in a medium bowl. Add the octopus to the marinade bowl and gently roll to coat. Preheat the grill.
3. Set the grill to medium-high heat and coat the grates with oil. Set the octopus whole (if small) or into large serving pieces directly onto the grates. Let the outside brown for 2-3 minutes per side. Rotate to develop a char then place onto a platter with extra marinade. Garnish with lemon wedges.
