1. Preheat oven to 275 degrees Fahrenheit. Line a baking sheet or roasting pan with aluminum foil.
2. Remove the membrane from the back of the ribs. Just slide your fingers around the side to loosen it up and rip it right off. Use a paper towel to provide a better grip if slippery.
3. In a small bowl, stir together the ingredients for the dry rub, paprika, salt, pepper, onion powder, garlic powder, and ground mustard. Rub this mixture generously over the outside of the ribs to coat. Place seasoned ribs in a single layer onto prepared baking sheet or roasting pan.
4. Cover pan with aluminum foil. Cook in the preheated 275F degree oven for 3 1/2 to 4 hours until ribs are tender.

1. Clean the ribs by stripping the pleura off the inside of the ribs (the tough membrane for you non-medical people). Trim any fatty areas as much as possible and look for bone chips from the processing.
2. Sprinkle heavily with the rub and rub in on all sides. If you are using my rub, you will need about 1/2 cup pre slab of rubs. Not the whole amount.
3. Seal tight in aluminum foil (heavy duty is better). If you have time, refrigerate at this point for 2 hours or even overnight. Even 30 minutes will get some extra flavor. Also, you can freeze at this point if you want. If you freeze, add 30 minutes to cooking time and you can go to the oven from the freezer.
4. Cook at 300° for approximately 2 hours. Place the 1/2 sheet pan the next level down to catch any dripping if the foil leaks. These are very moist and falling off the bone. If you want your ribs "dryer," open the foil for the last 20-30 minutes.

Place ribs directly on wire rack; brush 1/2 cup barbecue sauce on top of each slab. Return to oven; bake at 275°F until ribs are tender and meat is pulling away from bones, 45 minutes to 1 hour.
3. Remove from oven; brush slabs evenly with remaining barbecue sauce. Increase oven temperature to broil, and return ribs to middle rack. Broil until sauce bubbles and starts to caramelize, 3 to 5 minutes. Remove from oven; let rest 5 minutes. Serve.
