Basically you want to stick a meat thermo in the middle of the meat and see that it’s about 120 when you remove it from the oven.
4. Then, what you want to do is wrap it up in aluminum (just covering is fine) and let it sit for about 20 minutes. (Always let your steaks rest after cooking!) The meat will be medium rare. Cook it longer if you want it cooked more.
