2. Wash the lemon and dry it thoroughly. Use a fine grater to zest the lemon rind into a large bowl. Be sure to get the entire colorful outer layer of the lemon. Then cut open the lemon and squeeze the juice into the bowl being careful not to let any seeds in the bowl.
3. Add the cashew butter, eggs, vanilla, baking soda and stevia to the bowl and mix with a fork or spoon until all of the ingredients are fully blended.
4. The consistency will be like a thick viscous batter which is a bit thicker than nut butter, but a bit thinner than usual cookie dough. Take 12 small heaps of the batter and place onto a cookie sheet shaping into a cookie shape.

Category: Healthy DessertsServings: 15Total Time: 32 mins1. Preheat oven to 350°F. Line a baking sheet with parchment paper or greased foil. Set aside.
2. In a medium bowl, add all ingredients. Using a rubber spatula, stir and fold until thoroughly mixed.
3. Using a small or medium cookie scoop, scoop and drop cookie dough balls onto the prepared baking sheet, spaced evenly apart. Using a fork, press down on cookies to flatten. Repeat in the opposite direction, creating crisscross marks. Cookies will spread a bit.
4. Bake for 10-14 minutes. Mine took 12 minutes. Transfer cookie sheet to cooling rack, and allow to cool for 20-30 minutes—do not remove from sheet for at least 20 minutes, as cookies are very soft and fragile. Then, if desired, transfer cookies directly onto the cooling rack to cool completely. After cooling, cookies will be firm, but still fragile and melt-in-your-mouth. Handle with care. Enjoy!
