Beat on medium speed until smooth and the consistency of mayonnaise, 1 to 2 minutes. Add the walnut-flour mixture and beat on low speed until combined. Then, increase the speed to medium and beat until very smooth and fluffy, about 3 minutes.
4. Using a ½-ounce cookie scoop or 1 tablespoon, portion 15 mounds of dough onto each prepared baking sheet, spacing them apart equally. Wet the tips of your fingers and gently flatten each mound into a 1 ¾-inch-diameter disk; you will have to rewet your fingers between each.
