Total Time: 3 hrsCategory: DinnerCalories: 445 per serving1. Remove the skin off the back (bone side) of each rack of ribs: Using a thin paring knife (or flathead screwdriver), slide it under the clear membrane over one of the bones. Lift up to separate and pull-off with your fingers or with a paper towel. It comes off in sheets and takes a little time. Be patient.
2. Dry the ribs with paper towels and rub olive oil on both sides of ribs, 1/2 tbsp per side. Season the back of the ribs with salt and pepper, then apply 1/2 tbsp of the dry rub and massage into the ribs. Flip the racks over and repeat on the meat side.
3. Remove the foil cover and place the ribs on a rack fitted into the sheet pan. Sprinkle more salt and pepper and dry rub over the ribs and cook an additional 20-30 minutes uncovered.
4. Turn the broiler to high and place the oven rack to the closest position. Remove the foil cover and flip the ribs bone side up. Slather the back of the ribs with bbq sauce, approximately 2 tbsp each. Place the ribs under the broiler for 3-5 minutes or until the sauce begins to darken in spots. The time will depend on your oven broiler. Remove the ribs from the oven, flip them over and repeat.

Frequently Asked Questions

How to cook prime rib in a convection oven?

How to Cook Prime Rib in a Convection Oven. Place the roast in a roasting pan, rib side down and fat side up. Insert the food thermometer into the thickest part of the roast. Make sure it doesn’t touch the bone. Place the roast in the oven. After 15 minutes, reduce the temperature to 325 degrees Fahrenheit

How do you cook a roast in a convection oven?

A roast can be placed in a convection oven by following these steps: Preheat the oven to 375 degrees Fahrenheit. Place the roast in a baking dish or cover it with foil. Bake for 25 minutes or until the roast is cooked through and browned. Remove from the oven and let it cool for 5 minutes before cutting into small pieces and serving.

What is the best way to cook a prime rib?

The best way to cook a prime rib is to start with your oven on a high temperature so the outside of the roast browns quickly. Then you can reduce the temperature so the roast cooks low and slow and reaches the desired internal temperature (see sidebar). The only tool you will really need is a meat thermometer.

What temperature should a prime rib roast be after 2 hours?

After 2 hours, the center of your prime rib roast will be 135 degrees F, which is medium-rare. If you prefer a higher finished temperature, just keep the oven door closed until your desired “pull/remove from heat” temperature is reached. New model ovens can cool down faster than older models due to the internal fan.
