1. In a 1 1/2-2 quart saucepan, whisk together the coconut milk, coconut flakes, granulated stevia/erythritol blend, and eggs. Heat mixture over low heat, stirring frequently until it just comes to a simmer. Remove from heat.
2. Place chopped dark chocolate and coconut oil in a small, heavy saucepan. Place over low heat, stirring constantly, until just melted. Allow to cool for 5 minutes.

3. Whisk the mixture well then transfer it into 8 popsicle molds. Place in the freezer for at least 4 hours or overnight, to firm up.
4. If you'd like to dip them in chocolate, melt the chocolate in a large bowl. Line a large baking sheet with parchment paper. Remove the popsicles from the molds and moving quickly, dip them in the melted chocolate and place them on the lined sheet. Place them back in the freezer for the chocolate to firm up.
