Estimated Reading Time: 4 mins1. In a large pitcher, Muddle limes, sugar, and limes. Once juices are all released and the scent of mint fills the room it should be ready for the rum. Add the rum and stir to dissolve the sugar as best as you can.
2. For best results, place pitcher into the refrigerator to help macerate the limes further and the flavors to come together. It is best to do this step at least 2 hours before you want to serve this. You can do the next step immediately but it is best when it sits.
3. Once ready to serve, pour in the club soda and stir.
4. Fill highball glasses about 3/4 with ice and add a few lime slices or wedges. Pour in mojito to fill the glass. Garnish with fresh mint leaves.

3. Single Mojito: Place mint leaves and 1 lime wedge into a sturdy glass. Use a muddler to crush the mint and lime to release the mint oils and lime juice. Add 2 more lime wedges and the simple syrup, and muddle again to release the lime juice. Do not strain the mixture.
4. Fill the glass almost to the top with ice. Pour the rum over the ice, and then fill the glass with club soda. Stir, taste, and add more simple syrup if desired. Garnish with the remaining lime wedge and a sugar cane stick, if desired.
