1. Add almond flour (1 1/2 cup), salt (1/2 teaspoon), xanthan gum (1/2 teaspoon), and erythritol (1/2 cup) to a food processor. Pulse several times to combine.
2. Add unsalted butter (2 tablespoon) and almond milk (1/4 cup), occasionally scraping down the sides of the food processor to thoroughly combine everything. Process until the dough forms into a ball.
3. Form the dough into 2 small balls, and press each into a disk.
4. Roll each disk between 2 pieces of parchment paper until 1/8" thick -- The thinner the dough, the crisper your cookies will be.

1. Using a food processor, crush the entire package of cookies, pulsing until it is a fine powdered crumble.
2. Cut the cream cheese in chunks and add it into the cookie crumble mixture. Mix until the crumble and cream cheese forms a ball of soft dough.
3. Spoon or scoop the dough, and roll into equal size 1-1 ½ inch balls. I think this is easiest using a small spring-loaded cookie dough scoop.
4. Place each ball on a piece of parchment paper, repeating until all of the dough is used. Place the cookie balls in the refrigerator or freezer to cool for about 20 minutes. This will make it easier to dip them in the candy coating.

1. Sift together almond flour, coconut flour, and salt in a small bowl. Set aside. I recommend using a sifter because it creates a fine, delicate cookie texture.
2. In a medium bowl, cream together butter, monkfruit and vanilla extract.
3. Slowly add dry ingredients to the butter mixture. Mix until combined using an electric mixer.
4. Move cookie dough to a sheet of plastic wrap. Mold into a flat disc shape and cover with plastic wrap. Refrigerate for 30 minutes or until stiff. Okay to store overnight in the refrigerator at this point or in the freezer.
