1. Preheat oven to 375º. Sift together flour, baking soda and salt ~ set aside.
2. In the bowl of a stand mixer, fitted with a paddle attachment, cream butter and peanut butter until well blended. Add 1 cup each of granulated sugar and brown sugar and beat until light and fluffy.
3. Add the eggs and vanilla and beat until smooth, scraping down with a spatula as needed. Stir in flour on low speed, a little at a time, until well combined. Mix with a spatula to make sure all the flour is combined.
4. Shape into 5 dozen balls, using a level tablespoon of dough for each. Roll each ball in sugar and place on ungreased cookie sheets, 2 inches apart. Bake 9 minutes, remove from oven and gently press kisses into tops of cookies. Return to oven for another 3 minutes. (My original recipe says 8 minutes and then 2 minutes ~ not long enough in my oven. Cookies should be lightly golden and not raw.)
