1. In a medium-sized bowl, mix together the cocoa powder, white sugar and vegetable oil. Beat in eggs one at a time, until fully incorporated. Mix in the vanilla.
2. In another bowl, combine the flour, baking powder, and salt. Stir the dry ingredients into the wet mixture just until a dough forms (do not over beat). Cover bowl with wrap and refrigerate for at least 4 hours or overnight.
3. When ready to bake, preheat oven to 350°F | 175°C. Line 2 cookie sheets or baking trays with parchment paper (baking paper). Roll 1 tablespoonful of dough into balls for smaller cookies, or 2 tablespoonfuls for larger cookies.
4. Add the confectioners (icing) sugar to a smaller bowl. Generously and evenly coat each ball of dough in confectioners' sugar and place onto prepared cookie sheets.

1. Whisk together the flour, cocoa powder, baking powder and salt.
2. n the bowl of a free standing mixer or using an electric hand mixer, whisk together the eggs, granulated sugar, oil, orange zest and vanilla extract until the mixture is smooth. Fold in the dry ingredients until you have a soft, sticky dough. It will look more like cake batter at this stage, but that's exactly how it's supposed to be. Cover the bowl with plastic wrap and chill for a minimum of 2 hours (overnight is better.)
3. When you're ready to bake the cookies, preheat the oven to 180C/160Fan/350F/Gas mark 4. Grease and line a couple of large baking sheets.
4. Place the icing sugar in a shallow bowl. Using your hands, roll the cookie dough into walnut sized balls. Roll each piece of dough in the icing sugar and place on the lined baking sheets about 2 inches apart - there is no need to flatten them. Bake for 7-8 minutes or until set around the edges. They will still be quite soft in the middle but they will firm up as they cool. Once cooled, the cookies will be crisp around the edges and deliciously fudgy in the middle.
