1. In a large bowl, use an electric mixer to beat the cake mix, cocoa powder, oil and eggs on medium speed for 2 minutes, stopping to scrape the sides of the bowl as necessary. Add vanilla and mix to combine.
2. Cover tightly and chill the dough for at least 2 hours, or up to 2 days.
3. When the dough is cold and firm, preheat the oven to 350° F. Line baking sheets with parchment paper or silicone mats. Place the confectioner’s sugar in a small bowl.
4. Scoop the dough into 1 ½-inch balls; roll in powdered sugar to coat. Place about 2 inches apart on the prepared baking sheets; press down gently to slightly flatten the cookies.
