1. Mix the chicken and the marinade ingredients together in a large bowl, and set aside.
2. Heat a large, heavy casserole pot until it is hot and add in the oil. Add the garlic and white part of the spring onions. Stir for a minute or two until the garlic starts to brown and then add the chicken. Fry the chicken until it starts to brown, then add the Chinese cabbage, carrot, mushrooms, and spring onion greens. Fry for a few minutes until the vegetables are softened.
3. In a separate small pot, boil water. Cook the noodles. Drain and set aside.
4. While the noodles are cooking, add the sauce ingredients and stir to combine. Bring to a simmer, and taste the sauce. Adjust for seasoning.
