1. In a medium sized bowl, mix the soy sauce, vinegar, brown sugar, garlic and ginger together.
2. Add the diced chicken pieces to the marinade and then mix thoroughly until the chicken is coated.
3. Cover and chill for 30 minutes or up to 24+ hours. I've even marinated this up to 2 days and it was fantastic.
4. Remove the marinated chicken from the fridge and set aside.

1. Pat chicken pieces dry with paper towel. Put the chicken and the Marinade ingredients into a zip lock bag or a bowl.
2. Toss chicken inside the bag well ensuring that all pieces are coated with the marinade. Marinate for 30 min-1 hour.
