On the stove, cover the pan and cook on low for about 30-35 minutes, or until chicken is cooked through and mushrooms are tender. In the slow cooker, cover and cook on LOW for 5 hours or on HIGH for 2.5 hours. Serve. Transfer the chicken stroganoff into a bowl.
Chicken Stroganoff is made with thin cut slices of chicken and mushrooms in a rich, creamy, incredibly flavorful sauce. The recipe is naturally low carb and gluten free and can be served over cauliflower rice, zoodles or spaghetti squash to keep the carbohydrates lower, or over egg noodles for a more classic presentation.
Thicken the sauce with the coating on the chicken. Traditionally stroganoff is served over noodles or pasta. You can however serve Chicken Stroganoff with rice or mashed potatoes. Or keep it low carb and serve with cauliflower mash, zucchini noodles or sautéed green beans!
Cook Chicken Stroganoff according to directions up to the point of adding the cream cheese and sour cream. Add the chicken back to the sauce but do NOT add sour cream or cream cheese. Let Stroganoff cool completely in the refrigerator. Add Stroganoff to a a freezer safe container or freezer size bag, seal, label and freeze.
