    1. Preheat your oven to 425 degrees Fahrenheit and prepare a large baking sheet by spraying it with cooking spray (and/or line it with parchment paper for even easier clean up!)
    2. Make sure all the veggies are cut into pieces that are the appropriate size so they cook evenly. The potatoes should be cut into 1 or 1 1/2-inch pieces because they take longer to cook, the zucchini, broccoli, and cauliflower into 3-4-inch pieces because they cook faster.
    3. Add the broccoli, cauliflower, onion, tomatoes, zucchini, frozen carrots (use frozen...fresh will take a lot longer to roast!), and potatoes to the baking sheet.
    4. Drizzle the veggies with the olive oil, parsley, oregano, salt and pepper.

    2. Chop potatoes into 3/4-inch pieces and place in a large bowl. Add 1 tablespoon olive oil, 1 teaspoon Italian seasoning, 1/2 teaspoon salt, and a few cracks of pepper. Toss to coat, then spread the potatoes in a single layer on the baking sheet, leaving space between them. Roast for 10 minutes.
    3. While the potatoes start roasting, slice the sausages into 1” coins, cut any thick stems from the broccoli florets, and chop the pepper into 1” pieces. Combine these ingredients in the same bowl you used for the potatoes. Add the remaining 1 tablespoon olive oil, 1 teaspoon Italian seasoning, 1/2 teaspoon salt, and a few more cracks of pepper. Toss well.
    4. After the potatoes have been in for 10 minutes, take out the pan, push potatoes to the outer edge, and add the mixture of sausage, broccoli, and peppers to the empty space in the middle. Return to the oven and roast another 18-20 minutes, until the sausage is crisp and the veggies are tender.
