It’s hearty, easy to make, and is always perfect for dinner. This pesto chicken and broccoli dinner is a jazzed-up version of my favorite creamy chicken and broccoli pasta. It’s loaded with garlic, parmesan, pesto, and chicken + broccoli.
Add pesto sauce to the tops of each chicken breast and layer with tomato and mozzarella cheese. Bake for 30 minutes until chicken is cooked through. Use this low carb chicken pesto recipe in a sandwich using our very own keto sourdough bread recipe. Slice bread, toast, and slather with extra pesto sauce.
While the chicken and broccoli are cooking, heat the butter and garlic in a medium sauce pan over medium-low heat. Cook until the garlic is fragrant and the butter begins to brown. Increase the heat to medium and add the heavy cream, parmesan cheese and pesto. Bring to a slight boil and then reduce the heat to medium-low and let simmer and thicken.
Lightly grease a large rimmed baking sheet. Place chicken on the prepared baking sheet and sprinkle with garlic salt and black pepper. Spread pesto over chicken and top with tomatoes and cheese. Toss broccoli and oil together in a bowl. Place broccoli around chicken on the baking sheet. Sprinkle salt and pepper on top.
