1. Chop the bottom part of the napa cabbage and separate the leaves. Dip each leaf in boiling water for 10-15 seconds to wilt. Set aside.
2. In a large bowl, add the ground chicken, carrots, red onion, garlic, kinchay, soy sauce, oyster sauce, ground black pepper and egg. Mix well until fully combined.
3. In a flat clean space, place one leaf of napa cabbage. Put around 1 tablespoon of meat filling at the bottom base of the leaf. Roll and wrap carefully. Repeat this step with the rest of the leaves until all the meat fillings are consumed.
4. Steam the cabbage rolls for 7 to 8 minutes under low heat. Remove the cabbage rolls from the heat and let it cool a little.

3. Combine chicken, refried beans and 3/4 cup cheese in a medium bowl. Coat the bottom of a 9-by-13-inch baking dish with a few tablespoons enchilada sauce. Fill each cabbage leaf with about 1/3 cup of the chicken mixture and roll into an enchilada. Place, seam-side down, in the baking dish (they will be snug). Drizzle with the remaining enchilada sauce and sprinkle with the remaining 1 cup cheese.
4. Bake until heated through and the cheese is melted, about 20 minutes. Sprinkle with cilantro, if desired.
