1. Coat chicken with flour.
2. Heat olive oil in a skillet over medium-high heat; cook chicken with garlic, ginger, and bay leaves until chicken is browned, about 5 minutes per side.
3. Mix wine, vinegar, and honey together in a saucepan over medium heat; cook and stir until sauce is reduced by half, about 5 minutes. Add orange juice, lemon juice, salt, black pepper, and cayenne pepper and continue cooking until sauce is reduced by 2/3, about 10 minutes. Strain reduction sauce.
4. Pour strained reduction sauce over chicken; add pine nuts and simmer over medium heat until chicken is no longer pink in the center, about 20 minutes. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C).

2. In a shallow dish, combine breadcrumbs, cheese, salt and pepper.
3. Brush the chicken breast with olive oil on all sides and working with one thigh at a time, place it in the bread crumbs making sure to coat it well. Turn it over and coat the other side, pushing it down into the bread crumbs to make sure it is completely coated.
4. Heat the remaining oil in a skillet until it is glistening. Carefully place 3-4 thighs in the hot oil making sure not to crowd them in the pan. Cook the chicken about 3-4 minutes per side, until they are golden brown. Transfer the chicken to a baking dish. Continue to cook the remaining chicken thighs. You may need to add some additional oil to your skillet between batches. When all of the chicken has been browned, set the baking dish aside
