These cookies are also keto-friendly and low carb. I created these chewy almond cookies by mistake while trying to make something else. But it was a happy mistake because I really enjoy these simple cookies when I’m craving something sweet. They are firm on the outside and soft and chewy when you bite in.
These lovely little Italian cookies have a beautiful chewy texture and bursting with almond flavour. And because they're gluten free and dairy free, everyone can enjoy them! The almond sliver coating is something I copied from an Italian bakery in Sydney.
And, the molasses really gives an awesome depth of flavor to these low carb almond flour chocolate chip cookies. The amount of molasses per cookie ends up being just a few drops, not significantly altering carb count.
