3. Next, make the brownie layer. In a medium sauce pan, melt butter. Add erythritol and stir to combine, letting the sweetener dissolve, but do not boil. Remove from heat. Add vanilla. Whisk in eggs one at a time until batter begins to thicken. Add dry ingredients and mix until just combined; do not over-mix. Pour brownie batter directly on top of cookie layer.
4. Bake for 20-25 minutes until set and edges puff just slightly. Remove and let cool completely before slicing and serving.
