These Italian Amaretti cookies are crisp on the outside, chewy on the inside. A great, gluten-free way to use up those leftover egg whites. Preheat the oven to 170C/325F. Line two baking trays with a silicone mat or baking parchment. Using a hand whisk or mixer, whisk the egg whites to stiff peaks.
Then you need an egg white, almonds, amaretto liqueur, almond extract and sweetener. Actually, you don’t ‘need’ amaretto liqueur, but it does impart a stronger flavour to the biscuits, so I recommend it. I know it’s expensive, especially if all you can get is the well known brand Amaretto di Saronno.
