Heat up your cast iron skillet over medium-high heat and add oil to it. When the pan is hot, place the tri tip roast into it and sear it for about 2 minutes per side or until browned all around. Once seared, transfer the roast to your preheated oven and bake for about 20 minutes or until done.
About 30 minutes ahead of time, bring the tri-tip out of the oven to allow it to begin warming. About 15 minutes ahead of time, pre-heat the oven to 350 degrees. Add 2 tablespoons of olive oil or other cooking oil to a large, heavy ovenproof pan. Heat pan on high. When the pan is very hot, add the tri-tip, fat side down.
Sprinkle both sides of trimmed tri-tip with steak seasoning. In a large skillet over med-high heat, add 1 tablespoon of oil. Sear on side of tri-tip for 4-5 minutes. Add 1 more tablespoon of oil, flip the meat, and sear on other side for another 4-5 minutes. Place seared tri-tip in a 6 qt slow cooker.
While you don't need oil for a cast iron tri-tip, adding a small pat of butter before laying the steak in the skillet adds delicious flavor. Allow the butter to barely melt; if you leave it in for any amount of time before you add the steaks, the butter will burn.
