The pulled pork on it own is very low in carbs and keto-friendly, but its accompaniments are often filled with net carbs. Though carnitas pork is tasty enough on its own, we wanted make every aspect of the dish 100% keto.
Pork carnitas are essentially Mexican pulled pork. I.e. pulled pork, but with Mexican flavors and crispy bits of pork. When it comes to pulled pork recipes, I am picky to a fault. So the fact that these carnitas are my absolute FAVORITE kind of pulled pork means that they are both ridiculously flavorful AND easy to make.
Here’s The 411: Look for pork shoulder or pork butt – which are the same thing: cuts of pork from the shoulder that have enough fat to keep things moist & tough enough to withstand any high-temperature slow cooking method! Traditional Carnitas are cooked in fat – keep that in mind when selecting your pork!
